At first, Kalamata wasn’t sure if being called obstinate was good or bad. The name of the restaurant comes from the revolutionary war, when soldiers on Sullivan’s Island defended their fort so well that the newspapers said, “Miss Carolina Sulivan, one of the obstinate daughters of America.” In tribute, Kalamata orders the Miss Carolina and obstinately tries to eat it all herself. That usually means she gets through two slices and saves the rest to share with Al Dente at home.
